Friday Food

Next week is VBS so it will interfere with dinner some and the church provides dinner for the kids but sometimes my kids are still hungry.  I have debated back and forth on if I think something of these meals are too time consuming since we will have a week full of busy evenings and I decided its not since its summer.

Sunday – The kids will all be coming home and typically they aren’t hungry when they get home until you ask them what they ate.  But that is beside the point.  Cooking is not on the plan for Sunday night so we are having sandwiches.

Monday – Spaghetti, garlic bread and salad.  We are actually having spaghetti because I need the jar the sauce comes in for my craft stuff.

Tuesday – Pork chops, corn on the cob, green beans and rolls.

Wednesday – Chicken fingers and fries, I know we just had this a few weeks ago but the kids love it and its easy to make.

Thursday – BBQ chicken, baked beans, mac & cheese and rolls.

Friday – I am hoping for a date night.  Even though Alyssa and Noah will have just gotten back from being gone for 8 days they will be with their Dad so hopefully Adam will plan a date night.  If not, I guess I’ll feed him a sandwich.  =)

Friday Food #12

Friday Food

Sorry about last week.  The stomach bug hit our house and lets be honest I was not thinking about food while tending to a sick kid.  But she is better now and we are back.  Next week will be peaceful.  Most of the kids will be gone so food planning is much easier.  I basically picked stuff that I know Adam and I will like.  Also next week Adam is off work on Monday so we have an extra day, yay!!

Saturday – We are going out to eat with my sister, brother in law, niece and cousin for my sister’s 21st birthday.

Sunday & Monday – We are going to smoke and grill some ribs and chicken and grill some veggies.  I figured since it would just be me and Adam and Bradley that we could cook something that we could basically eat for two days.  Since it is Memorial Day and I am trying to get back to shopping based on what is on sale I went with ribs and whole chicken.  Also I selected a bunch of fresh veggies that are on sale including zuchinni, squash, carrots and onions.  We are also having sweet potatoes and rolls.

Tuesday – I have been wanting a good hamburger this week so I thought hamburgers sounds good.  When I worked in the office I use to eat at a little mom and pop store all the time called Our Place and they have the best hamburgers and I have been craving it.  So we are going to have hamburgers and fries.

Wednesday – We are going to have BLT, pasta salad and chips.  Summer always means a good BLT so I am ready for some good tomatoes.  Last time I made the pasta salad I used a box that came with seasoning but instead of the water and oil I used Italian dressing.  This time I am going to add cucumbers and tomatoes.

Thursday – We decided we will eat leftovers.  Since it will just be us we will easily be able to pull together some leftovers and have plenty to eat.

Next week I get a break on cooking.  Since Sunday is Mother’s Day I don’t have to come up with anything.  Yay!!

Sunday – Mother’s Day!  My husband is cooking a surprise for me and while I don’t completely know what it is I know salmon is involved (my favorite).

Monday – I decided I am going to try out a recipe I saw on High Heels & Grills this week called Easy Sour Cream Chicken Enchiladas.  My husband has been talking about enchiladas all school year.  The kids have them at school and he loved them when we were in school so finding a recipe for them has crossed my mind.  Then when Sarah posted this recipe last week I knew it was prefect.  So perfected that I had to pin it so I’ll be able to easily find it later.

Tuesday – I am really in the mood for light and refreshing, with that in mind I decided I’d make chicken salad and pasta salad for dinner.

Wednesday – I asked my husband what he wanted for dinner and his response was “fried chicken”.  My Mom taught me how to make the best fried chicken legs and they always seem to come out just right.  So its fried chicken, black eyed peas, mash potatoes and corn bread.

Thursday – I was out of ideas and the kids were getting home from school.  I asked them what they wanted and Taylor told me pork chops.  I think she was reading my mind.  I knew I didn’t want anymore chicken meals and I am not a huge hamburger meat person.  We are going to have pork chops, sweet peas and corn.

Friday – It will be just me, Adam and Bradley so I am hoping for another date night.  If not I guess I’ll have to come up with something last minute.

Friday Food #10

Friday Food

In case you missed it I made a button for my blog the other day.  You can find it on my side bar.  I also made the graphics for Friday Food and Monday Memories.

Sunday is the first Sunday of May which is decoration. I haven’t been in several years now and I miss going and seeing everyone so I told my Mom I was going this year. We go by the cemetery and put out flowers then we have lunch at my aunt’s house. Since we will be having such a big lunch I am planning sandwiches and chips for dinner.

Monday is sliders and fries. I made this a while back and we ate it for days. But I made a lot more than I wanted to. The kids have asked me for it several times lately. It’s easy to make and I am going to be in the office all week and Adam will be out of town Monday night so I will be swinging kids, dinner, dishes, all our nightly routine by myself, so I figured it would be good to make. I brown some ground beef and drain it. Then I put it back in the pan with velveeta and a little bit of milk. Once the cheese is melted I serve it on a roll.

Tuesday is Doritos chicken. We have tried this before and it was good. It’s a little spice to the girls but they ate it pretty well. Me, Adam and Noah loved it last time so I knew it was a repeat meal.

Last week we had breakfast for dinner and it was such a huge hit that I decided we’d have it again. But this time we are having biscuits, gravy, eggs and hash browns for dinner on Wednesday.

Thursday is chicken quesadillas and Mexican corn. I wanted something Mexican but not nachos or tacos. Last time I made these I only had enough chicken cooked for the kids to each have one and they could have eaten more so I know this time to cook two lbs of chicken instead of just one.

Friday we are going out to eat. This weekend will be the only weekend I’ll have Alyssa and Noah for a month so I am going to have fun. Last time they were at home on the weekend we went to Chickfila for dinner Friday night and it was fun so I was thinking we’d probably have Chickfila again.

Friday Food #9

I have decided to do something a little different with my Friday Food post. Instead of telling you what we ate this past week I am going to tell you what we are eating this next week so menu planning but on Friday (for now). I am debating on changing my blogging schedule.

A few days ago the children and I sat down to talk about what they want to eat next week. Generally I don’t cook on the weekends, I just need a break. So I didn’t plan tonight or Saturday night and now I am sitting here going what is for dinner tonight?? Oops!!!

This is what we came up with for next week:

Sunday – Grilled chicken and vegetables. Last weekend we put carrots, broccoli and onions in some foil on the grill with the chicken and it was soooo good. So I decided we’d have it again this week and since Adam works the grill Sunday sounded like the best day.

Monday – Waffles, bacon, hash browns and eggs. Alyssa picked this meal and I was so surprised that she picked eggs.

Tuesday – Pizza and cheese bread. Kids like it and its easy so it works.

Wednesday – Spaghetti, breadsticks and salad. We had spaghetti last week and Bradley loved it so when Noah suggested it, I agreed. But I decided to add salad.

Thursday – Veggies and cornbread. I needed one more meal and the girls were saying snacks and fruit. So when Noah started naming veggies I thought hmmm let’s add some cornbread and it sounds good to me.

I probably need a meal for Friday too but hopefully it will only be me, Adam and Bradley and we can go on a date. Hint, hint!! In case Adam is reading this. 🙂

Since its getting to be nice weather and more fruit is coming into season I have decided I am going to start making a big bowl of cut fruit on the weekends to have during the week for a snack or something extra to go with dinner. I am sure Taylor will be excited about this because when I asked her for a meal idea she said I don’t know. Then later came back and said fruit. What are some of your favorite fruits to eat during the summer months??

Friday Food #8

Since I was missing last week I want to share a dish that we made last week. Actually my dear husband made it when I was sick. He found a recipe online for chicken cornbread casserole. We didn’t exactly have everything it called for so instead he choose other items from our pantry. It turned out so well that we ate it two nights in a row and even Alyssa liked it. That’s HUGE because she never likes anything. Sorry I can’t share the recipe. I was sick and didn’t cook it but I do have this lovely picture to share.

This past weekend my husband smoked two butts. We like to smoke them, pull them, vacuum seal them and freeze them. Then we have something yummy to eat for lunch or whenever we need something fast. After doing that we decided to have BBQ nachos for dinner one night. We ended up eating so much of it that I am not sure if we are going to have any left to freeze. I meant to take a picture of mine after I fixed my plate but I was hungry and forgot. Oops!!

Friday Food #7

This week I did more cooking!! Go me!

Monday started out slow. I cooked one of the kids’ favorites, home style bakes mashed potatoes with gravy, chicken and biscuit.

Tuesday we had chicken nuggets and fries.

Wednesday I was adventurous with some pork chops. I wanted to do something easy so I rinsed them, patted them dry, put then on a baking sheet and covered them with a pack of ranch mix and Italian dressing mix then I baked them on 350 for 45 minutes. They turned out great! We had cream potatoes, black eyed peas and broccoli & cheese rice to go with it.

Thursday I was feeling a little under the weather and we still had a good bit of stuff left over from the previous nights so we had left overs.

Friday Food #6

I know this is way late. Friday was a rather hectic day for me and Bradley. We had many places we had to go including the doctor and the weather was awful the whole time we were gone. So when we got back I was rather lazy. I ended up watching Netflix the rest of the evening.

Anyway, last week it was just me, Adam and Bradley. We had some pepperoni we needed to eat before I had to trash it so we decided we’d make a big dish of something and eat on it all week. Then Monday hit, we had bad weather and lost power. So we packed up and went to my parent’s house for a few days. We took our dish with us but never ate anymore of it past Sunday. 😦 But it was sooooo good and I’ll be making some again soon for the kids.

A while back I found a recipe on Pinterest that included pepperoni, pasta and cheese. All sounds great with kids but it gets even better…it cooks in the crockpot. The next time I was at the store I grabbed some pepperoni, but instead of making what I had found on Pinterest, I used some of them in a HomeStyle Bakes meal. By the time Adam and I decided we were going to use the pepperoni in whatever we cooked it was too late in the day for the crockpot. So we decided we’d do something similar but in the oven.

We browned some ground beef and sausage, boiled some noodles, then we put all of it in a casserole dish, mixed in some cheese, pepperoni and sauce. Then we covered it with more cheese, covered it with foil and put it in the oven till it was warm through and through. Some of the pepperoni that was on the edge burned but it was so good!

Friday Food #5

This week I lacked on cooking. Ok so I didn’t cook at all. We ate out a few nights, ate some leftovers from eating out and Adam cooked a Home Style bake this week. So I thought I’d share my favorite Pinterest meal with ya’ll instead. Hopefully my headaches will be better next week and I’ll be more productive.

Bourbon chicken!! This is my favorite dish I have cooked from Pinterest. I actually remember the first night I cooked it, yummy! Adam & my brother in law were working on our remodel (converting a one car garage into a pantry and bedroom). I don’t cook it as often as I would like because like I said its “my” favorite dish and the girls are not as fond of it. Noah likes it but he’d prefer something else too. Yum, now I want it.

Friday Food #4

This week we are eating whatever is in the pantry. When I say whatever I mean whatever. I haven’t been to the grocery store in about two weeks other than to grab this or that so by the end of the week the pickings will be slim.

Monday, we had another one of my tried and true favorites…home style bakes. This time it was the creamy potatoes with chicken and biscuits. Needless to say I was worried about it. See when I was cooking it I was on the phone with Adam and well I wasn’t fully paying attention and I doubled the water that goes in the biscuit top so I had to add some flour to it to thicken it up. Then I had another issue..it overflowed in the stove. Who wants to come clean my stove for me now?!? But luckily it turned out great and everyone loved it. We had zero leftovers. When Noah asked for seconds Taylor got upset because she wasn’t done with hers yet and was afraid he’d finish it off and she wanted seconds too. They all said it was kinda like having breakfast for dinner.

Since the kids were all about breakfast for dinner, Tuesday night we decided we’d have just that..breakfast. Adam made some stuffed chicken over the weekend so I thought this would be the perfect time to use the rest of the sausage. We had pancakes, sausage and eggs. It may sounds crazy but I always double the recipe when making pancakes because my kids can put away some pancakes. Alyssa ate 6, Taylor ate 5 and Noah ate 4. Adam asked how many should he make because he had made 18 and it wasn’t enough. But now we have leftovers which means Mommy and Daddy can have breakfast together before work.

Wednesday I had a meeting at the school and forgot to lay out some meat. So when I went to the store to pick up a few things I grabbed another home style bake. Ok, I know we have been eating them a lot lately, but you really can’t go wrong with them. This time I got pizza pasta. The one thing I don’t like about them is the lack of meat. So I added some pepperoni and some sauce before I put it in the oven. I tossed some garlic bread in the oven too and we were good to go. Everyone loved it and we didn’t have any leftovers.

Thursday I was feeling a little under the weather. I have been having headaches almost everyday for several weeks, gotta love sinus season. So Adam brought home Chinese food. The kids love it, it’s really inexpensive and its easy. So we ended the week on a lazy note.
